I’m often overcome with the insatiable urge to bake. I find that pre-heating ovens, mixing bowls and large wooden spoons are conducive to happiness and general well-being. Oh, and then there’s peanut butter, which has long been recognized for its therapeutic qualities. When peanut butter and baking join forces, anything can be dealt with — all-nighters, econ midterms, swine flu and even upsetting “Project Runway” eliminations. These peanut butter chocolate chip cookies only require four ingredients, most of which you can swipe from your dining halls (all of which you can purchase at Durfee’s), and are as easy to make as a bowl of cereal. They are also gluten free, as the batter contains no flour. Warning: these cookies will make you popular.
Peanut Butter Chocolate Chip Cookies
Ingredients:
1 cup peanut butter
1 cup sugar
1 egg
1/4 cup chocolate chips
Preheat oven to 35o degrees. In a large bowl, mix together all ingredients. Spoon out batter onto greased baking sheet, to make 12 cookies. Bake for 10 minutes, or until lightly browned. Eat your troubles away.
